Cranberry and citrus is a match made in heaven! This Cranberry Orange Cooler is made from a simple syrup, using Cape Cod Select Premium Frozen Cranberries, triple sec, and orange juice. You can enjoy it on the rocks, but it feels extra special thrown in the blender!
Cape Cod Select graciously sent me a sample of their Premium Frozen Cranberries so I could create this recipe for their Holiday Blogger Recipe Challenge. Find them in a freezer section near you, with their handy store locator.
To make this recipe, begin by making a simple syrup. In a heavy sauce pan I added 1 cup sugar and 1 cup water, and added 2 1/2 cups of Cape Cod Select Premium Frozen Cranberries. Allow the syrup to come to a boil, and cook for about 10 minutes. If your berries start to burst, you syrup can thicken a little too much, so make sure you keep a close watch. Strain the syrup through a fine mesh sieve, or cheesecloth, and allow it to cool before using.
For 1 cocktail, you will need:
1 oz cranberry simple syrup
2 oz orange liqueur, such as triple sec
1/4 cup orange juice
Serve on the rocks, or blend with 1 cup of ice.
Add a few spoons of the simple syrup to some granulated sugar, and combine to edge your glass, for added flair.
Garnish with Cape Cod Select Premium Frozen Cranberries (thawed) and wedges of clementine, or mandarin orange.
